Butternut Squash and Tomato Sammies.

The potatoes need to be diced up smaller, but otherwise, pretty plate!
Even though this is the prettiest of plates, I couldn't eat more than a bite. I am in Ethiopian overload like whoa. All I have wanted to eat all week is Happy Camper sammies with garden tomatoes and craptastic Tofutti singles. In fact, I'm SO SAD because there is only one slice of Tofutti left in the fridge. Also, Autumn started yesterday, so the tomatoes are sure to be short lived around here. What will I do?

I just whipped up a batch of homemade cheese, and today I'm playing around with a special beet kitfo. We'll see how ground roasted beets taste mixed with spiced oil, hot pepper and cheeese.



  1. Tofutti makes singles?? That is wow, though I'd probably rather eat the butternut squash myself.

    1. Girl, where have you been! As a new vegan, those slices made Subway sammies bearable. FYI they don't melt.
