I de-ribbed them and cut the greens into thin ribbons, then threw 'em in a big pot with some minced garlic, a handful of water and a tablespoon of yummy coconut oil. Once they cooked down a little, I covered them and continued to cook on low with the addition of a little liquid smoke, salt and a spoonful of nutritional yeast until they were tender (if you make these, keep in mind they'll also bake in the oven for another 25 minutes).
Just in case you have no idea what I'm talking about, snoozed off or just plain forgot, here's a brief recap of this fine potluck tale: sturdy paper muffin cups were filled with a circle of sweet potato, a rousing layer of Mac 'n' Cheesie and then followed with a smoky blanket of tender collards.

I knew I could do no wrong by topping this all off with BBQ Soy Curls, plus they're quick! At the rate I was going, I needed an out, as I was starting to develop troubled breathing along with large welts (all due to potluck adrenaline and the prospect of long blog posts).

Loving all of the previous elements, I didn't know how you were going to top them (literally & figuratively), but you've totally done it! After seeing pics of your Ethiopian picnic and now this, clearly I have to get myself invited to a party where you'll be cooking!! I love smoky, sticky Soy Curls. This dish is like a mouthwatering, vegan archeological dig.

ReplyDeleteWhen I lived in NOLA, no one had picked up Soy Curls yet, so I bought a gigantic 12 pound box, took out the veggie bins in my fridge and stuffed them in there. I had Soy Curls everywhere!

Since we're on the subject of soy curls, have you tried the Butler Chik-Style Seasoning that one can order with?

My God. These are like mini occupies but even better. I kind of want to make them for the potluck this weekend but I would just want to eat them all myself!
ReplyDeleteYes, that was my inspiration! If you do, here's a tip--what I'll do next time. Leave off the pesky pastry on top and layer like this: Mac, collards, bbq then put a dollop of mashed sweet potatoes on top--run it through a pastry tube if you want. perfect and also XGFX to the max. I got these cups at cash n carry for pennies. If you don't have that, it's just a restaurant supply store that anyone can shop in.

I know I'm in GA, but I can't get them ANYWHERE but online. Regular grocery stores don't carry them, Whole Foods doesn't carry them - I have to order from VeganEssentials. I used to be able to get them at Cosmo's Vegan Shoppe here in Atlanta, but since they shut down earlier this year, I'm outta luck. Soy Curls are one of the bestest things in the entire world - especially to share with meat-eaters - but please (if this is not TMI) beware the Soy Curls farts. They will make you stanky!!!

even without the BBQ, this is my usual way of making them! super fast and super yummy.
