So, why am I fussin'? Well, after acupuncture, I came home to make MORE xgfx pumpkin bagels. I won't bore you with another picture, but these were filled with hemp seeds, cuz I need extra protein to heal my frozen shoulder and topped with pumpkin seeds! Then on top of that, I made xgfx peanut butter swirled brownies to sneak into a late night Harry Potter showing. Can you believe I kept on going, like the good energizer vegan bunny I am. YES YES YES I DID.
I have super secret special Internet friends, and I bet I'm not alone. Mine are awesome, and they're also gluten-free and vegan just like me. So today, when all I wanted to do was cuddle with Dr. Phil and eat leftovers, I cooked even more--for their sweet camaraderie. Yes, Officer, I cooked to blog. I shook my xgfx booty with Jessy from happyveganface and Allyson from Manifest Vegan to bonk the Interwebz with our own personal xgfx culinary challenge. Aren't we the best?
Xgfx Pierogi Challenge!
Both Jessy and Allyson grew up on pierogi and miss it very much since ditching wheat. Me? I don't know jack banana about pierogi, but I hate to be left out, and, I love stuffed food. So each of us came up with own version to share with the world.
I was super insanely cranky when I was cooking mine, so I'm sorry no measurements. But here's what I did.
The filling is made from boiled carrots and potato (I know!), mixed with caramelized onion and cabbage. Then I seasoned the mixture delicately with salt and ground pepper to taste, plus a bit of cayenne and some fresh parsley. The dough came out sorta play-doh textured, but it worked just fine. I used ultra fine brown rice flour, which I need to tell you about sometime, Mochiko, potato starch and salt. If I had to guess, I'd say it was about 85 percent brown rice flour and then evenly split between the other two. I had to keep the dough moist to roll out, but the finished product was mighty delicious, especially after I browned the little dumplin's in Earth Balance.
